No harder than the acrylic ones that are sold in kitchen stores. Kitchen
knives are soft and get dull frequently. That is why a steel works so well
and why butchers and sushi chefs are always honing there knives. I also read
a report that wooden cutting boards are safer germ wise than plastic.
